Preheat your oven to 180°C and line a baking tray with parchment paper. Ensure your cannabutter is at room temperature for easy mixing.
Cream the softened cannabutter and caster sugar in a large bowl until light and fluffy, about 3-4 minutes with an electric mixer.
Add the milk and vanilla extract to the butter mixture, beating until well combined.
Sift together the flour, cocoa powder, and baking powder in a separate bowl. Add the salt and desiccated coconut, mixing to combine.
Fold the dry ingredients into the wet mixture until just combined – don’t overmix or your biscuits will be tough.
Shape the mixture into 18 equal portions (about 20g each) and roll into balls. Place on the prepared baking tray, leaving 5cm between each biscuit.
Press each ball gently to flatten slightly, then press crushed cornflakes onto the top and sides of each biscuit.
Bake for 12-15 minutes until the edges are set but centres still look slightly soft. They’ll continue cooking on the hot tray.
Cool on the tray for 5 minutes, then transfer to a wire rack. Once completely cool, top each biscuit with a small dollop of chocolate icing and half a glacé cherry.
