- 1 pinch salt

Preheat oven to 180°C and line a 20x30cm lamington tin with baking paper, leaving overhang for easy removal.
Make the base by rubbing 100g cannabutter into flour, sugar, and salt until mixture resembles breadcrumbs. Press firmly into prepared tin.
Bake base for 15 minutes until lightly golden. Remove and reduce oven to 160°C.
Prepare filling by whisking eggs and sugar until pale. Add lemon juice, zest, flour, and remaining 25g melted cannabutter. Mix until smooth.
Pour lemon mixture over warm base and bake for 15 minutes. Meanwhile, combine coconut, sugar, and egg white for topping. Candy Thermometer make this step much easier.
Add coconut topping and dot with regular butter pieces. Bake another 5-8 minutes until coconut is golden.
