Cannabis Hummingbird Cake
Cannabis Hummingbird Cake. Approximately ~23.3mg THC per slice at full strength. 70 min total, 12 slices yield.

This Southern American classic has found a devoted following in Australian kitchens, and for good reason. The Hummingbird Cake’s irresistible combination of tropical pineapple, ripe banana, and crunchy pecans creates a moist, flavourful layer cake that’s pure comfort food. Despite its name, no hummingbirds are involved – it’s called that because it’s supposedly so sweet it attracts hummingbirds!
Our cannabis-infused version replaces regular butter with cannabutter in both the cake and cream cheese frosting, delivering approximately 23mg THC per slice when using standard cannabutter. The tropical fruits help mask any cannabis flavour, making this an ideal celebration cake for experienced cannabis users, or calculate your exact dose with our free Edibles Dosage Calculator.

Preheat your oven to 180°C and grease two 23cm round cake tins. Line the bottoms with baking paper.
Combine flour, sugar, bicarbonate of soda, cinnamon and salt in a large mixing bowl. Stir in the chopped pecans.
Whisk together eggs, melted cannabutter, oil and vanilla in a separate bowl. Add the crushed pineapple with juice and mashed banana, mixing until combined.
Pour the wet ingredients into the dry ingredients and fold together until just combined. Don’t overmix – a few lumps are fine and will create a more tender cake.
Divide the batter evenly between your prepared cake tins. Use Digital Kitchen Scale (0.01g) to ensure even layers for consistent dosing.
Bake for 22-25 minutes, until a skewer inserted in the centre comes out with just a few moist crumbs. Check temperature with Candy Thermometer for accuracy.
Cool in tins for 10 minutes, then turn out onto wire racks to cool completely before frosting.
Make the frosting by beating cream cheese and cannabutter until fluffy. Gradually add icing sugar and vanilla, beating until smooth and spreadable.
Assemble by placing one layer on your serving plate, spreading with half the frosting, adding the second layer, then topping with remaining frosting. Garnish with extra chopped pecans.
Perfect Ripeness
Use very ripe bananas with brown spots – they’re sweeter and mash more easily into the batter.
Drain Smart
Don’t drain the pineapple juice – it adds moisture and flavour to the cake.
Half-Strength Option
New to edibles? Replace half the cannabutter with regular butter for ~12mg per slice.
Storage Secret
This cake actually improves after a day – the flavours meld and the texture becomes more moist.
Frosting Fix
If your frosting is too soft, chill for 30 minutes. Too stiff? Add a tablespoon of milk.
Label Everything
Always label your finished cake with “CONTAINS CANNABIS”, dosage per slice, and the date made.
| Method | Duration | Notes |
|---|---|---|
| Room temperature | 2-3 days | Cover with cake dome or foil |
| Refrigerated | 5-7 days | Best for cream cheese frosting |
| Frozen | 3 months | Wrap slices individually, thaw at room temp |

Absolutely! This is perfect for beginners or when serving mixed groups. Replace 25g cannabutter with regular butter to reduce dosage to approximately 12mg per slice. The cake will still be delicious and you’ll have better control over potency.
Cannabis edibles typically take 30-120 minutes to take effect, with peak effects around 2-4 hours. The fats from the cream cheese frosting and oil in the cake can slow absorption slightly. Always wait at least 2 hours before considering a second slice.
Yes, decarboxylation is essential before making cannabutter. Raw cannabis won’t get you high – you need to heat it to activate the THC. This should be done before infusing into butter, not during the cake baking process.
Store in the refrigerator for up to 7 days due to the cream cheese frosting. Cover well or store in an airtight container. Individual slices can be frozen for up to 3 months – wrap each slice separately and label clearly with contents and dosage.
If you’ve consumed too much, stay calm and hydrated. Find a comfortable, safe space and remind yourself the effects are temporary. CBD can help counteract THC effects if available. Never drive, and call the Poisons Information Centre (13 11 26) if you’re seriously concerned.
Yes, you can substitute cannabis coconut oil for the cannabutter in the cake portion, but stick with cannabutter for the frosting as it creates better texture. Use the same amount and calculate dosage based on your oil’s potency. The cake may have a slight coconut flavour.
