The Hummingbird Cake’s irresistible combination of tropical pineapple, ripe banana, and crunchy pecans creates a moist, flavourful layer cake that’s pure comfort food. Despite its name, no hummingbirds are involved – it’s called that because it’s supposedly so sweet it attracts hummingbirds!

Preheat your oven to 180°C and grease two 23cm round cake tins. Line the bottoms with baking paper.
